Baked Tofu with Veggies and Pepitas


  • 16 oz. organic tofu
  • 3 large carrots
  • ¼ pound long beans
  • 1 tbsp pumpkin seeds
  • 1 tsp sesame seeds
  • 2 tbsp sesame seeds oil
  • ½ onion
  • Sea salt
  • Black pepper
  • Sauce for tofu (marinade):
  • 1 tbsp. sesame seeds oil
  • 1 tbsp. rice vinegar
  • 1 tbsp tamari (or soy sauce)
  • 1 tbsp water
  • 1 tsp-minced ginger
  • ½ tsp. minced garlic


  1. Combine all the ingredients for marinade in a bowl and mix sauce properly. Then set aside.
  2. Cut tofu into small cubes and marinate them in the just prepared sauce in a shallow container for about 30 min (in the fridge).
  3. When ready to bake the tofu, heat the oven to 350°F. Line a baking sheet with parchment and place tofu cubes. Bake around 30 min until cubes turn nice gold/brownish color.
  4. In the meantime, slice carrots (thickly) and onion and cut off the ends of the long beans. Mix vegetables in a bowl.
  5. Fry the vegetable mix with sesame seeds oil for about 10-15min. Add salt, black pepper and sesame seeds.
  6. Combine baked tofu cubes and a vegetable mix and sprinkle pumpkin seeds and sesame seeds. Serve warm.
