Hummus anyone? I don’t know a single person that would say no to it. Seriously! Who doesn’t like that light and creamy spread that tastes so good and is actually healthy? Believe it or no, this well-known Mediterranean meal has many recipe variations. Today, I’d like to share my favorite one with beet, fresh mint and cashews. Sounds tempting? Do not wait, just go for it and thank me later☺

Beet Hummus with Fresh Mint

Beet Hummus with Fresh Mint


  • 1 medium red beet, cooked
  • 2 cloves of garlic
  • 1 cup of cooked chickpeas, drained and rinsed
  • 4 tbsp. tahini
  • 1 tbsp. cashew butter
  • ½ lemon juice
  • ¼ cup olive oil
  • 1 tsp. balsamic vinegar
  • Hummus oil dressing:
  • Black pepper and sea salt
  • Toasted crushed cashews
  • Finely sliced fresh mint


  1. Combine all the ingredients for hummus in a food processor and blend until smooth creamy texture. Add water if needed and let it stay for 2 min.
  2. In the meantime, mix with a spoon all the ingredients for the oil dressing and set on the side.
  3. Place hummus in a bowl and top with the oil dressing. Garnish with extra fresh mint and crushed toasted cashews.
