German Vegan Pfeffernusse Cookies

Yield: 25 cookies

German Vegan Pfeffernusse Cookies


    For the Cookies:
  • 2 1/4 cups gluten-free flour
  • ½ tsp. cocoa powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. crushed anise seed
  • 1/2 tsp. cinnamon
  • 1/4 tsp. baking soda
  • 1/4 tsp. all spice
  • 1/4 tsp. nutmeg
  • 1/8 tsp. cloves
  • 3/4 cups stevia
  • 1/2-cup safflower oil
  • 1/4-cup molasses
  • 2 flax eggs (1 flax egg = 1 tbsp. ground flax + 3 tablespoons water)
  • 50g dark chocolate
  • For the Glaze:
  • 1-cup vegan confectioner’s sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • 1/4-tsp. agave
  • 1/4-tsp. vanilla extract


  1. Preheat the oven to 350F.
  2. Prepare flax eggs by combining ground flax and water and set aside.
  3. Combine sifted flour with the rest of the ingredients (without chocolate) and mix well (help with your hands) until smooth dough.
  4. Roll the dough and then flatten on the board. Cut off cookies with a cookie cutter and place them in the oven (use baking paper) for about 15 min.
  5. In the meantime, prepare the glaze by mixing all the ingredients listed above.
  6. Glaze cookies when they are ready. Repeat it again when cookies cool down.
  7. Melt chocolate and dip the bottom of each cookie in it. Place the cookies in the fridge for 15 min. Enjoy!
