Mushroom Vegetable Noodles with Peanut Tofu


  • 1 big carrot
  • 1 medium raw beet
  • 1 big zucchini
  • 8 oz organic tofu
  • 1 cup cooked edamame
  • 1 pint mushrooms
  • 2 tsp sesame seeds
  • 1 tsp coconut oil
  • 1 tsp sesame oil
  • Fresh mint
  • Sea salt
  • Freshly ground black pepper
  • Dressing:
  • 4 oz coconut milk
  • 2 tsp ground ginger
  • 2 tbsp peanut butter
  • 1 tsp tamari
  • 1 tsp tahini
  • 1 tsp rice vinegar


  1. Prepare dressing first by combining all the ingredients (for dressing) in a small saucepan and by stirring them slowly on low heat for about 5 min. Set aside to cool down.
  2. Cut tofu in small pieces and fry them with coconut oil for about 10 min.
  3. Slice mushrooms and fry them with sesame oil for about 15 min.
  4. In the meantime, prepare vegetable noodles with a spiralizer and combine them with cooked edamame.
  5. Combine vegetable noodles, tofu, mushroom, edamame , dressing together in a bowl and mix everything properly. Add sesame seeds and sea salt, then garnish with fresh mint. Serve warm.
