Here is the recipe of tasty, crunchy salad with quinoa and tempeh. For those of you who have never tried tempeh, it is made from fermented soybeans that have been pressed into firm cakes. It has a thick texture and lots of protein in it. Quinoa salad with Tempeh

Ingredients

  • 6oz tempeh
  • 100g cooked quinoa
  • 1-cup baby carrots
  • 2 tbsp. dried currents
  • 1 tsp. sesame seeds
  • Handful organic baby arugula
  • 3 tbsp. olive oil
  • 1 tsp. lemon juice
  • 2 tbsp. tamari
  • Sea salt

Instructions

  1. Cut tempeh in small cubes and fry them with tamari sauce on a medium heat for about 5 min., and then set on the side.
  2. Cut carrots and arugula and combine with the rest of the ingredients in a bowl, and then add tempeh cubes.
  3. Add seeds, sea salt and olive oil, lemon juice and mix everything properly.
