Raw Gingerbread Buckwheat Sandwiches

Raw Gingerbread Buckwheat Sandwiches


  • 50g organic buckwheat (pre soaked in water)
  • 50g organic raw oats
  • 100g organic almonds
  • ½ cup fresh chopped coconuts
  • 100g organic dates
  • ½ tsp. vanilla extract
  • 2 tsp. ginger powder
  • 100 organic cashews
  • 1 tbsp. vegan honey
  • Cinnamon, nutmeg, cloves, all spice
  • Himalayan salt


  1. Combine buckwheat, almonds, dates, ginger powder, cashews, honey and blend until smooth texture. When ready scoop it the mixture out of then food processor, cover it with the foil and place in the frid ge for 30 min.
  2. In the meantime, blend coconuts until soft mixture in the food processor, then add raw oats, vanilla, salt, honey, spices and blend again until creamy consistency.
  3. Take out the nutty mixture from the fridge, flatten it on the horizontal surface and cut out the circles with a glass or form.
  4. Scoop creamy mixture on each circle and cover it with the other circle.
  5. Place little sandwiches in the fridge for 30min.
