Raw Matcha Cake with Blueberries


    For the base:
  • 100g organic almonds
  • 50g organic cashews
  • 50g organic walnuts
  • 50g organic dates (soaked in water in advance for at least 30min)
  • 100g organic blueberries
  • 1tsp. vanilla extract
  • 1tbsp. vegan honey
  • 1tbsp. fresh lemon juice
  • 1 tsp. cacao powder
  • 1tsp. virgin olive oil
  • 1 tsp. rose water
  • Sea salt
  • For the top:
  • 2tsp. Yuve Matcha green tea
  • 7tbsp. coconut flakes
  • 30g organic blueberries


  1. Combine all the ingredients for the base in a food processor and blend until smooth creamy texture.
  2. Place the “dough” on a clean surface and shape the cake with your hands.
  3. Place it in the fridge to set for about 20min.
  4. In the meantime, place coconut flake and matcha powder in a food processor and blend until grainy green texture. Add vegan honey (optional) and set it on the side.
  5. Take out the cake from the fridge and top it with a matcha-coconut layer.
  6. Garnish the cake with fresh blueberries.
