Vegan Artichoke Lemon Spread


  • 1 12 oz. bag Frozen Artichoke Hearts, ideally halved or quartered
  • 4 Cloves Garlic, peeled
  • ¼ cup Chopped Fresh Parsley
  • 1 tbsp Lemon Zest
  • ½ tsp Fresh Black Pepper
  • 2 tbsp White Vinegar
  • 1/4 tsp Salt
  • 4 tbsp Olive Oil
  • 1/4 Baked Sweet Potato (Optional)
  • ¼ Cooked Beet (Optional)


  1. Spread artichoke hearts and garlic on a cookie sheet and broil for 5-15 minutes, until browned.
  2. Combine all the ingredients together in a food processor and blend them until smooth texture.
  3. Cool the mix off or serve warm with bread, crackers or veggies.
  4. Top with slices of sweet potato, beet and almonds (optional).
