  • 4oz. Silken Tofu
  • 1 tsp. Organic Lemon Zest
  • 2tbsp. Vegan honey, stevia or any other sweetener of your choice
  • 2tbsp. Safflower oil
  • ½ tbsp. Lemon juice
  • ½ tsp. Turmeric


  1. Place all the ingredients in a blender and blend until smooth creamy texture.
  2. Place the pudding in a cup, cover it with a plastic wrap and refrigerate.

    Good foundation of a recipe but WAY too much turmeric! I tripled the recipe and still used 1/2 tsp total. It turned neon yellow in the fridge and sadly had that slightly bitter “i put in too much turmeric” flavor that kind of ruined it. No prob though, it was easy to whip up. Next time I will use a lot less, or use some food coloring or just skip the color. I did add quite a bit more lemon juice (the equivalent of 2 1/2 Tbsp for single batch) and the amount of zest called for and it was JUST lemony enough. Adding the extra liquid was fine, it still had good shape and firmed up a little more in the fridge. I used 2 Tbsp sugar and a sprinkle of stevia. Will be making this again with some tweaks.
