Love crepes? While traditional French crepes can easily add up calories to your daily diet, I came up with a healthier and vegan alternative, Matcha Crepes with Cherry. These easy to cook green crepes are light, not too sweet and have a fresh and unique aroma. Make brunch better with the antioxidants packed dessert!

Vegan Matcha Crepes with Cherry


  • 280g-buckwheat flour
  • 500ml coconut milk
  • 2tbsp. coconut sugar
  • 3 flax eggs (1 tbsp. ground flax: 3 tbsp. water, let it sit for 15min)
  • 1 tbsp. Yuve Matcha green tea
  • ½ tsp. vanilla extract
  • A pinch of sea salt
  • 3 tbsp. coconut oil
  • Filling:
  • 250g-vegan yogurt of your choice (unflavored)
  • 150g fresh organic cherries (fruit of your choice)
  • 100g cashews


  1. Combine flax eggs, coconut sugar, vanilla extract and salt in a bowl and properly blend everything.
  2. Add 250g of coconut milk and mix the dough. Sift the buckwheat flour in a bowl and mix the texture again.
  3. Add the rest of the coconut milk, Yuve matcha powder and coconut oil, and then mix it again.
  4. Melt some coconut oil in a skillet over medium heat.
  5. Gently place a small portion of the dough on the skillet and cook until the bottom of the crepe is golden, then flip it and cook another 30sec.
  6. Remove from the heat and cover with a layer of the filling. Do the same with the rest of the crepes.
  7. For the filling, combine all the ingredients in a food processor and blend until smooth texture.
  8. Garnish your crepes with extra fruits, nuts, seeds or flowers. (Optional)
