Vegan Split-Pea Soup with Basil

  • 2 cups green split peas
  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 2 medium leeks, white and pale-green parts only, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, chopped
  • 4 leaves fresh basil
  • 4 cups vegetable stock
  • Salt and freshly ground black pepper
  • Small handful of fresh or dried parsley
  • Croutons (for serving; optional)


  1. Place the peas in a large pot or bowl, cover them with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
  2. Place peas in a large pot, add vegetable stock, salt and bring to boil and then simmer for 1h, stirring occasionally.
  3. Add chopped vegetables, herbs and spices and simmer for about 30 more minutes.
  4. Blend peas until puree’s consistency. Garnish soup with fresh basil or mint and serve with croutons.
