Vinegret or Vinaigrette is a staple of Russian cuisine.  This colorful and healthy salad is great for parties because it can be made a day in advance. In fact, it tastes even better the next day!

Packed with vegetables, it is a great vegan or vegetarian option for a celebration.  Whether you are looking outside of the traditional Thanksgiving dishes or simply looking for an exotic healthy salad, Vinegret is a great and yummy addition to a fitness focused lifestyle.  Let’s take a closer look at its preparation:

Vegan Vinegret or Beet Salad


  • 1 small onion
  • ½ canned red beans
  • 3 medium potatoes
  • 3 medium carrots
  • ½ sauerkraut
  • 3 medium beets
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley
  • ½ teaspoon salt


  1. Place beets in a medium pot and boil them for 1 hour or until they can be easily pierced with a knife.
  2. Cool off beets, peel them and cut into small cubes.
  3. Put carrots and potatoes in a separate pot and boil them about 30 min. Do not overcook the potatoes.
  4. Drain the vegetables and refrigerate them or let them sit until cool. Gently peel the vegetables.
  5. Dice cooked vegetables and the small onion.
  6. Add red beans, sauerkraut and chopped parsley.
  7. Mix beets with olive oil, so they do not color other ingredients in the salad.
  8. Add other vegetables and salt and properly mix everything.
  9. Garnish with parsley.
  10. Refrigerate until ready to use.
